Here we go again!  I want to start blogging again on a regular basis.  After winning the pie contest two years running, this year with my pecan-walnut pie with best looking pie to my cran-raspberry I feel inclined to experiment more and post my efforts.  I hope to start working on more baking goods and learning more on decorating. They were great, i may do some other plantain recipes!&lt;br /&gt;&lt;br /&gt;I made spanakopita today, i used feta and a blue chees and pumkin spice. Cioppino!!</title><content type='html'>Long time no Blog!! Not some oh, its the first time I didnt put jelly on a peanut butter sandwich and used bananas instead sort of change, unless you truly feel that affected you profoundly. Thats the key - it affected you profoundly, in some manner. A moment you can look back at and say that was a defining moment. The questions are simple, the answers might be harder - an item, person, event, or place that had that effect on you, and why. They dont have to be big splashy things - sometimes its something very small and simple that changes the way we view the world - the famed butterfly effect (and Im not talking about the Aston Kutcher movie). I was learning to brew beer with a friend of mine and after making a stout, we made an IPA. We used Cascade hops and after tasting the hops before adding them to the tea, it was exquisite!!&lt;br /&gt;&lt;br /&gt;2. WoW, so many to choose from, from the &lt;a href="http://www.recipezaar.com/3116"&gt;chicken biryani &lt;/a&gt;i had in &lt;a href="http://en.wikipedia.org/wiki/Bahrain"&gt;Bahrain&lt;/a&gt; to &lt;a href="http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_1304,00.html"&gt;PHO&lt;/a&gt; soup (and to mention the simple cauliflower soup i make). Like music its hard to pick a fatheire because thier is so much to choose from, food sings to me!!&lt;br /&gt;&lt;br /&gt;3. I spent 50 bucks to have racrestaurantin a resturaunt ( a little over $100 with my wifes meal also) in LA once, the place settings were extravagant and there were 6 servers for our party! But, the lamb had very littlvegetables the vegitables and potatoes Iere something i could have whipped up in 10 minutes. This experience made me realize that good food with lots of flavor could be had without pretention. (this night was saved because we then went to see &lt;a href="http://www.kithfan.org/"&gt;Kids in the hall &lt;/a&gt;live!!).&lt;br /&gt;&lt;br /&gt;4. OI so manI, but i guess i would have to say &lt;a href="http://www.epicurious.com/features/cookbooks/reviews/2005/vegetable"&gt;Vegetable Love&lt;/a&gt;, it has given me many thivegetables with vegavegetarian any vegitarian book has!!&lt;br /&gt;&lt;br /&gt;5. This one is sooooo easy, &lt;a href="http://www.altonbrown.com/"&gt;Alton Brown&lt;/a&gt;, he presents cooking in a simple and entertaining matter and does very well to present recipes!!&lt;br /&gt;&lt;br /&gt;6. My second wife (sorry Suzy), she is the one that first started me in cooking. She loved my food when I made it (although this did not stop her from being unfaithful), i started my love for cooking because of her! I saw you standing alone!!</title><content type='html'>Ok, well that was an experiment.&lt;br /&gt;&lt;br /&gt;I deleaved and cleaned the Cardoon, cut it into 2 inch pieces and boiled them in lemon juice and salt for 30 minutes. I then put them in a pan, made a bechemel sauce with mustard powder and salt, covered the piece with the sauce and topped with Cheddar cheese, then baked at 375 for 15 minutes.&lt;br /&gt;&lt;br /&gt;Well, the flavor is, how do I say, off. I usually like off flavors, but this one did not say to me "its pretty ok". I browned the scape a little and this gave the soup a soft roasted garlic taste to it!&lt;/p&gt;&lt;p&gt;I also used Superior Touch "&lt;a href="http://www.superiortouch.com/btb.htm"&gt;&lt;span style="color:#333399;"&gt;Better Than Bouillon&lt;/span&gt;&lt;/a&gt;", which gave it a nice rich taste. &lt;/p&gt;&lt;p&gt;I love this soup and it shows why fresh ingredients are the best!!&lt;/p&gt;&lt;p&gt;&lt;img style="DISPLAY: block; MARGIN: 0px auto 10px; CURSOR: hand; TEXT-ALIGN: center" alt="" src="http://photos1.blogger.com/blogger/4862/66/400/100_0760.0.jpg" border="0" /&gt;&lt;/p&gt;&lt;p&gt;Scape Vichyssoise&lt;/p&gt;&lt;p&gt;A classic soup (served hot or cold) for garlic lovers. If scapes are not available at a specialty shop or farmer's market, use 1/4 cup sliced garlic. Serve the stew with egg noodles or mashed potatoes.&lt;br /&gt;&lt;br /&gt;If you cannot find frozen pearl onion, substitute the same amount of peeled fresh pearl onions.&lt;br /&gt;&lt;br /&gt;1 (750 ml) bottle medium-bodied, fruity red wine such as Pinot Noir, Zinfandel, or light Rhone Valley wine&lt;br /&gt;2 cups low-sodium chicken broth&lt;br /&gt;10 sprigs fresh parsley plus 2 tablespoons minced fresh parsley leaves&lt;br /&gt;2 sprigs fresh thyme&lt;br /&gt;1 bay leaf&lt;br /&gt;4 ounces bacon, preferably thick-cut, cut crosswise into 1/4-inch pieces&lt;br /&gt;2 1/2 pounds boneless skinless chicken thighs, trimmed of excess fat&lt;br /&gt;Table salt&lt;br /&gt;Ground black pepper&lt;br /&gt;3 tablespoons unsalted butter&lt;br /&gt;24 frozen pearl onions (evenly sized), thawed, drained, and patted dry (about 1 cup, or 5 ounces) 8 ounces white button mushrooms, wiped clean, trimmed, halved if small and quartered if large&lt;br /&gt;2 medium cloves garlic, minced or pressed through garlic press (about 2 teaspoons)&lt;br /&gt;1 tablespoon tomato paste&lt;br /&gt;2 tablespoons all-purpose flour&lt;br /&gt;&lt;br /&gt;1. In large saucepan, simmer wine, broth, 10 sprigs parsley, thyme, and bay over medium-high heat until reduced to 3 cups, about 25 minutes. Remove and discard herbs.&lt;br /&gt;&lt;br /&gt;2. Meanwhile, cook bacon in large Dutch oven over medium heat until browned and fat has rendered, 7 to 8 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate and set aside. Pour off and discard all but 1 tablespoon bacon fat.&lt;br /&gt;&lt;br /&gt;3. Fold chicken thighs in half and season lightly with salt and pepper. Heat remaining tablespoon bacon fat in Dutch oven over medium-high heat until hot but not smoking. Brown thighs in single layer (thighs should remain folded in half to prevent overcooking) until just golden, about 3 minutes per side. Transfer chicken to large plate.&lt;br /&gt;&lt;br /&gt;4. Melt 1 tablespoon butter in now-empty Dutch oven over medium-high heat. When foaming subsides, add pearl onions and mushrooms; cook, stirring occasionally, until vegetables are lightly browned, 7 to 8 minutes. Reduce heat to medium, add garlic and cook until fragrant, about 30 seconds. Add tomato paste and cook, stirring frequently, about 1 minute. Add remaining 2 tablespoons butter. When butter is melted, stir in flour and cook, stirring constantly, about 1 minute.&lt;br /&gt;&lt;br /&gt;5. Add chicken thighs, reserved cooked bacon, reduced wine/broth mixture, and 1/4 teaspoon pepper; scrape bottom of pot with wooden spoon to loosen browned bits. Bring to boil over medium-high heat, reduce heat to medium-low, cover pot, and simmer 25 minutes, stirring halfway through cooking time.&lt;br /&gt;&lt;br /&gt;6. Using slotted spoon, transfer chicken to large serving platter and tent loosely with foil. Increase heat to medium-high and simmer sauce until it is thick, glossy, and measures 3 1/4 cups, about 5 minutes. Pour sauce over chicken and sprinkle with chopped parsley. Serve immediately.&lt;br /&gt;&lt;br /&gt;**If frozen pearl onions are not available, you may substitute fresh pearl onions instead. Do not use jarred pearl onions, which quickly turn mushy and disintegrate into the sauce. To use fresh pearl onions, trim the root and stem end of each pearl onion and discard. Boil for 1 minute, shock in ice water, then peel a thin strip from root to stem. It was very good!! I did not carefully measure the ingredients. I sweated about a cup of Vidalia sweet &lt;a href="http://www.vidaliaonions.com/"&gt;&lt;span style="color:#3366ff;"&gt;onion&lt;/span&gt;&lt;/a&gt; and a large portion of &lt;a href="http://en.wikipedia.org/wiki/Cauliflower"&gt;&lt;span style="color:#3366ff;"&gt;cauliflower&lt;/span&gt;&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;I also used white pepper to keep it clean!! I'm doing better by making my vegetable chopped with larger pieces.&lt;br /&gt;&lt;br /&gt;2 tablespoons extra-virgin olive oil&lt;br /&gt;2 teaspoons plus&lt;br /&gt;1 tablespoon balsamic vinegar&lt;br /&gt;4 green onions, chopped, divided&lt;br /&gt;&lt;br /&gt;1 pound uncooked medium shrimp, peeled, deveined&lt;br /&gt;1 tablespoon fresh lime juice&lt;br /&gt;2 1/2 cups bottled clam juice&lt;br /&gt;1/2 teaspoon annatto powder*&lt;br /&gt;&lt;br /&gt;1/4 cup olive oil1 cup chopped onion&lt;br /&gt;1/2 green bell pepper, seeded, chopped&lt;br /&gt;1 garlic clove, chopped&lt;br /&gt;2 plum tomatoes, seeded, chopped&lt;br /&gt;2 tablespoons chopped fresh cilantro&lt;br /&gt;1/2 to 1 whole Scotch bonnet chile or habanero chile, seeded, chopped&lt;br /&gt;1 cup medium-grain white rice&lt;br /&gt;&lt;br /&gt;Whisk extra-virgin olive oil, 2 teaspoons vinegar, and 2 chopped green onions in small bowl. Season with salt and pepper.Toss shrimp with lime juice in bowl. Let stand 30 minutes.&lt;br /&gt;&lt;br /&gt;Bring clam juice and annatto powder to boil in small saucepan, stirring to dissolve. Cover and set aside.&lt;br /&gt;&lt;br /&gt;Heat 1/4 cup olive oil in heavy large skillet over medium-high heat. Add shrimp with any juices to pan; sprinkle with salt and sauté until just opaque in center, about 3 minutes. Transfer to plate. Add onion, green pepper, and garlic to pan; sauté 2 minutes. Add tomatoes, cilantro, chile, and 1 chopped green onion to pan. Reduce heat to medium and sauté until vegetables are almost tender, about 3 minutes. Add 1 tablespoon vinegar and rice; stir 2 minutes. Add clam juice mixture. Boil rice mixture 1 minute. Reduce heat to low, cover, and cook until rice is tender and broth is absorbed, about 20 minutes. Season with salt and pepper. Stir in shrimp. Cover and cook until shrimp are heated through, about 1 minute. Transfer to bowl. Sprinkle with 1 chopped green onion. YEA!!!</title><content type='html'>This time next year i will be so busy with the club i won't know what to do, in the mean time....&lt;br /&gt;&lt;br /&gt;Saturday I made a &lt;a href="http://www.epicurious.com/recipes/recipe_views/views/1430"&gt;&lt;span style="color:#cc33cc;"&gt;jambalaya&lt;/span&gt;&lt;/a&gt;, it used &lt;a href="http://en.wikipedia.org/wiki/Andouille"&gt;&lt;span style="color:#cc33cc;"&gt;andouille sausage&lt;/span&gt; &lt;/a&gt;that i had my fiance send up from &lt;a href="http://www.tiptopmeats.signonsandiego.com/"&gt;&lt;span style="color:#cc33cc;"&gt;Tip Top meats&lt;/span&gt;&lt;/a&gt; in carlsbad, Ca. The flavor was nice and well rounded. The rice was a little mushy. but all in all it was a great dish.&lt;br /&gt;&lt;br /&gt;The only person to show was Dawn (who works at the &lt;a href="http://www.tcgh.com"&gt;&lt;span style="color:#cc33cc;"&gt;hospital&lt;/span&gt;&lt;/a&gt;), she brought over some thai food that was pretty good. There was a nice peanut sauce, that IMHO could have had more heat!!&lt;br /&gt;&lt;br /&gt;Her daughter loved my cats, and even thought Dark star (the large male) was pregnant, i said he was just fat.&lt;br /&gt;&lt;br /&gt;I hope to have another meeting next month with more people, i think i will plan it for the day of the opening of the &lt;a href="http://www.tillamookfarmersmarket.com/"&gt;&lt;span style="color:#cc33cc;"&gt;farmers market&lt;/span&gt;&lt;/a&gt;. We can do a tour and pick some fresh ingredients for cooking.&lt;br /&gt;&lt;br /&gt;Sunday i made a clam chowder out of the clams and juice the guys upstairs gave me, it came out really good (except i let it come to a boil which curdled the milk a little, so it had a slight bumpy look).&lt;br /&gt;&lt;br /&gt;Tonight, i made the jambalaya again. This time i made the vegetables a little chunkier and added 2 jalepeno's and 1 habenaro to kick the heat up a little. What a day!</title><content type='html'>What a horrible day, I find a steam leak in 1 sterilizer and after it is fixed the unit lockes up. The other sterilizer is leaking somewhere also and I have a third possibly having a problem.&lt;br /&gt;&lt;br /&gt;I was able to get the blood typing unit working again and passing QC, but still cant get above 54 gain!&lt;br /&gt;&lt;br /&gt;Had a nice dinner, Canadian farmed salmon with salt and pepper and lime with noodles and tomato sauce and a half of a avocado. So, I thought I would have lunch there. I found a Cajun restaurant called &lt;a href="http://www.worldweb.com/clickthrough.html?url=http%3A%2F%2Fwww.lilbayou.com&amp;table_id=2&amp;amp;listing_id=22294&amp;page_id=533138&amp;amp;pageview_id=368204477&amp;amp;vid=145063855" target="_top"&gt;Lil' Bayou&lt;/a&gt;. I had the Seafood and sausage Jambalaya. It was nice, could have been a bit more spicy and the rice was wonderful, I think it was a medium grain. And, since I left my book their, I think I will head up their on the morrow and get it (and also order a poboy).&lt;br /&gt;&lt;br /&gt;I cooked a chicken in my dutch oven, I rubbed it with kosher salt and added 2 apples, 1 onion and a bunch of pieces of ginger. It had a very subtle sweet and ginger taste!&lt;br /&gt;&lt;br /&gt;I had brought home some rock fish, but I waited too long to cook it, 3 days is apparently to long and it had a nasty fishy smell.&lt;br /&gt;&lt;br /&gt;I watched the worst movie ever this weekend, its called back from hell. It is worth seeing because it is so bad. Just when we reach a certain maturity that allows us to see and sense and touch the world around us. Apologies for sounding so morose, but after cooking a simple tomato, onion, garlic and heavy cream sauce with salt and pepper, i want to experience more!!!&lt;br /&gt;&lt;br /&gt;I finally started the Tillamook Cooking Club, i have 3 people interested and have a posting in the hospital newsletter that may atract more people, but i hope not too large since the first meeting will be a potluck in my apartment.  Our first meeting will be may 20th.&lt;br /&gt;&lt;br /&gt;Work went well today, have to get a part for the ABS2000. I think jerrie in purchasing will be mad at me because i keep complaining that my orders are late and she takes it seriously. Loooove It!!</title><content type='html'>This is starting to get easier!!&lt;br /&gt;&lt;br /&gt;During the Weekend i made a slow bake beans, with pinto ham hock and chili spices. I added a diced &lt;a href="http://www.thescarms.com/hotstuff/pepperfacts.htm"&gt;&lt;span style="color:#ff0000;"&gt;habanero&lt;/span&gt;&lt;/a&gt; at the begining of cooking and another diced &lt;a href="http://www.dianaskitchen.com/page/sauce/habanero.htm"&gt;&lt;span style="color:#ff0000;"&gt;habanero&lt;/span&gt;&lt;/a&gt; in the last hour of cooking. This resulted in a nice taste with a low level heat without being hot! I serve this on &lt;a href="http://www.usarice.com/"&gt;&lt;span style="color:#ffffcc;"&gt;rice&lt;/span&gt;&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt;Tonight i did a smaller version of &lt;a href="http://www.popcrazy.com/features/rachaelray.php"&gt;&lt;span style="color:#cc66cc;"&gt;Rachael Ray's&lt;/span&gt;&lt;/a&gt; i think it was from Nova Scotia or some such &lt;a href="http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_33445,00.html"&gt;&lt;span style="color:#ff6600;"&gt;apple&lt;/span&gt; &lt;span style="color:#cc9933;"&gt;potatoe&lt;/span&gt; &lt;span style="color:#999900;"&gt;hash&lt;/span&gt;&lt;/a&gt;, i diced 1 apple 1/2 onion and sweated them in olive oil and butter, then i added a diced large russet Potato that i microwaved for 8 minutes to soften it, salt and pepper and oh my!!! Tomorrow i hope to make the simple roma tomato green onion and cream sauce for a paste (she did it with a canadian benedict egg), and also i want to do a simple egg cooked in olive oil with sea salt and pepper (&lt;a href="http://inpraiseofsardines.typepad.com/blogs/2006/04/while_were_on_t.html"&gt;spanish style&lt;/a&gt;).&lt;br /&gt;&lt;br /&gt;Work was a little hectic today, had to order everything i needed to do anesthesia PM's. I found a decent &lt;a href="http://www.davis.com/showpage.asp?L3ID=1318"&gt;&lt;span style="color:#3333ff;"&gt;flow meter&lt;/span&gt; &lt;/a&gt;for $240. And, a tech at another hospital says he has a &lt;a href="http://www.testequipmentandtools.com/acatalog/Respirometers___Adapters.html"&gt;&lt;span style="color:#ccccff;"&gt;volume meter&lt;/span&gt;&lt;/a&gt; that he was going to throw it away, so i might be able to get it for free ($1000 saving). I learned a lot, but there was no service manual or other documentation until i asked for some kind of sheet so i did not have to keep asking the technician for the codes and sequence to enter each test sequence.  Service manuals were coppied to CD rom then we were told they would be mailed to us!&lt;br /&gt;&lt;br /&gt;So i learned lots with hands on, but we could of learned so much more with proper set up!&lt;br /&gt;&lt;br /&gt;Great resteraunt experience, phound a pho place and slurped some pho.  Ate at a caribean place, i want to go back!  The Rattlesnake pasta was good, i suggested that they could have had some kind of reduction sauce with a sharp taste in a small glass to pour over pasta or made with alcohol like tequila for a quick shot and called it antivenom.&lt;br /&gt;&lt;br /&gt;Dominicks was ok, the sausage was nice, but i like a firmer sausage while the sauce in the spagetti could have had more bite to it.&lt;br /&gt;&lt;br /&gt;Got to a waffle house, order almost got screwed up and I did not get the grits i ordered. I have to get my stuff packed loaded and moved before next week. They said they would let me know by Friday if I am being considered for a position. I went to Corvallis to hang with my brother Joe. We had some fun, especially watching the kids in front of the taco place they were getting a donation from for purchases done during certain times.&lt;br /&gt;&lt;br /&gt;Friday, I went golfing at &lt;a href="http://www.salemgolfclub.com/"&gt;Salem golf course&lt;/a&gt;. I was doing ok, , even after not playing for a number of years. Although, I was missing a six iron a putter and a pitching wedge, but I had 3 9 irons!!&lt;br /&gt;&lt;br /&gt;we (Rolf and joe and myself), had a quick lunch at Rudy's on the course then went home for a short rest. Afterwards we met mother and Hanna (joes wife) at &lt;a href="http://www.olivegarden.com/home.asp?busid=1311"&gt;Olive Garden&lt;/a&gt;. The food was good (except for mothers to salty food) and it was mostly fun.&lt;br /&gt;&lt;br /&gt;We all then went to the &lt;a href="http://www.oregongarden.org/calendar/Brewfest.htm"&gt;Oregon Craft Brewfest&lt;/a&gt;, I tried beers from breweries I have not tried ( a couple I have), The only problem I had was that the people pouring the beer had no idea about their product, they were just volunteers. The information was even in front of them in the write up of the beer. We left a little earlier than I wanted to but I had blueberry cheese cake to sooth me!&lt;br /&gt;&lt;br /&gt;I look forward to next week, I have an interview in Orange county with &lt;a href="http://www.aramark.com/"&gt;Aramark&lt;/a&gt; for &lt;a href="http://www.tricitymed.org/"&gt;Tri-Cities hospital &lt;/a&gt;in Oceanside California. I prepared some interesting dishes for their nightly repast. Among them were:&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_7759,00.html"&gt;Cincinnati Chilli&lt;/a&gt;, Which was very good and can be served on rice or spaghetti noodles!!!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_14135,00.html"&gt;Poached tilapia&lt;/a&gt;, although recipe calls for catfish I find Tilapia a much better fish.&lt;br /&gt;&lt;br /&gt;Lasagna, I used a rice lasagna noodle. The noodle disintegrated into small pieces during the preparation, I used the pieces in layers and they held together well with the cheese and meat preparation.&lt;br /&gt;&lt;br /&gt;Earlier I had made a vegetable lasagna that was OK, but it lacked savor. I had also made the pasta with a mechanical pasta machine. It was harder than I thought, but when the pastry started rolling out it came out great!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_15279,00.html"&gt;Buttermilk Fried Chicken&lt;/a&gt;, Lessons learned from this is either start with a higher oil heat because the heat drops dramatically when chicken is added which causes the inside to cook slower and the outside to grow darker. Or, use a cast iron pan that will retain heat better.&lt;br /&gt;&lt;br /&gt;On the job hunt, nothing really new in my area. I am looking at taking some education opportunities in radiological repair or other areas.&lt;br /&gt;&lt;br /&gt;Also, maybe a chance to spend 2 years in Indonesia managing a BMET shop. I saw the move &lt;a href="http://constantinemovie.warnerbros.com/"&gt;Constantine&lt;/a&gt;, and it was awsome!!! I liked the darkness of the movie with the addition of special affects!!&lt;br /&gt;&lt;br /&gt;I had a response to a possible job here in seattle. A company called &lt;a href="http://www.uhs.com/"&gt;UHS&lt;/a&gt; needs someone to manage thier &lt;a href="http://www.uhs.com/uhsweb/uhsweb.nsf/vwPageKeyLkup/AMPP%20Case%20Study%201?OpenDocument&amp;amp;AMPP"&gt;contract&lt;/a&gt;. It is something i am suited for and can do repairs also.&lt;br /&gt;&lt;br /&gt;The hardest part about Unemployment Compensation, is coming up with 3 contacts a week. That many jobs in my field do not come up that often in this area.
